Hi,
Sorry for the delay coming back to this.
Connecting manually to eduroam with my dev iPhone is successful but by default sets proxy to 'Off'
However, if I change it to 'Auto' it still works.
So it's just the CAT config that it's working for our iOS devices.

the isssue here is that if OUR iOS devices have auto...and work elsewhere
then they wont work at your site because your network doesnt provide required
information... which the iOS device really shouldnt care about.
I'm wondering if the profile being created by CAT is actually correct....
if you manually configure an iOS device for eduroam at your site and choose
proxy auto - what happens? all works okay?
