<salespitch>Well, yes of course you do!</salespitch>

Unless you choose to fiddle with a wpa_supplicant.conf config file on
the filesystem yourself (and risk this being undone with UI-induced
overwrites), you need to use an app to set the expected server name.
Manual UI will not get you there.
