For now, this is just FYI - I don't think we can do much about it.

A quick test with the latest iPadOS 13 (actually 13.1.2 already) shows that
by default, the browser (Safari) is set to desktop-mode and thus identifies
itself as ' Macintosh; Intel Mac OS X 10_15' (and thus defaults to the 'Apple
macOS Catalina' profile in CAT). Pretty weird it even identifies as Intel,
while it definitely does not have an Intel CPU inside... Anyway, at least for
me, the Catalina profile works on iPad. So it's mostly cosmetic.

As noted above, there's not much we can do about that right now - other than
to be aware of it.
