You never know whether the profile really got installed whithout looking
at the server side. If there is any previous configuration for SSID
eduroam, replacing it will silently fail and iOS sticks to the old one.
Make sure you remove both manual and profile-based configs for this SSID.
This implies that you need some helper/onboarding network (e.g. mobile data)
to
access cat.eduoram.org
Also, restart your device once before accessing cat.eduoram.org
(Cases where this does the job are rare on modern iOS, but they do exist).
