Hi,
  I have just run this particular installer and all settings look fine. Your second screenshot does not agree with the settings from the script. Unless something got recently changed in the CAT configuration the settings should be:
Authentication - PEAP, Anonymous identity - anonymous AT dit.ie, CA certificate ca.pem

You are supposed to run the downloaded script with bash. Running is from the terminal is the best option:
bash eduroam-linux-DIoT.sh
