Hello,
Android 14 indeed changes default-config behaviour by adding an outer identity "anonymous" (but without any domain suffix) as a default.
eduroam authentication routing requires domain suffixes, and the Android 14 behaviour breaks it.
I just visited the first Reddit link you included in your mail and the comments gave away that others do solve this issue by removing the term "anonymous" in the config window.
I would also like to add that this particular complexity should never really worry you: if your institution participates in eduroam CAT or any other professional Wi-Fi onboarding tool, then you never need to visit the Wi-Fi connection details. An app will do all this for you. In the case of eduroam CAT, this app is "geteduroam". You should download and try this app, and see if your institution is listed inside the app.
