Hi,

the profile you get from eduroam CAT is just a 'plist'-File which is 
basically just XML. Just edit it with any plaintext editor or if you 
have access to macOS use Xcode. You may have to remove the 
Code-Signature parts though as they will break if you edit the file.

Depending on your MDM it may be easier to just create a Wifi Profile 
from scratch there with information from your IT Department on how to 
configure eduroam manually... (EAP-Type, Phase2 Type,...) Or use the 
Apple Configurator 2 to create the Profile.

You also could just push the mobileconfig as is and let the user type in 
the credentials...
