The workaround you suggest seems viable to me.

I recognise there is some value in being to define the wired
configuration for some profiles only.

The cleanest way to do this is probably to copy the behaviour of the EAP
properties - allow to configure on the IdP-global level, but also allow
overrides in profiles.

I have added this to the feature request list for version 1.2 - but it's
going to be a while until that's finished.

For now, the workaround should serve you well.
